Question: doesn’t that gorgeous wooden box smell like fish, after slicing that bonito? And how do you clean it? AND: where do you buy those fantastically looking things? Like that glass…narrow neck glass, with wooden thing around its neck, with lather string around it? ( I am so impressed with how eloquent my English language is😂)

It was kind of upsetting when I made miso soup from scratch and it was just as good as the regular miso soup I can get from multiple japanese restaurants near me.
I guess thats the problem with traditional recipes

Isn't the precursor (Dashi) just a jar of salt water & rice, with a cloth over the top? That then ferments and turns yellowish… and that is what you would use as the "water" for this recipe…. the stuff you added is like basically just spices like you would add dill to pickled cucumber.
It's basically pickle juice… right?
Then you just set aside the dregs to re use, and the main liquid you use as stock….?
It's Lactobacillus that gives flavor, which is just everywhere. The flavour depends more on what region the fermentation occurs & how the farmer grew the original grain.
